Avocado, Tomato, and Watermelon Salad
Serves 4-6
This salad screams, “Summer!” and we love its zippy, spicy, salty-sweet vibe. This combination marries perfectly with our 2020 Estate Sauvignon Blanc’s buoyant acidity and grapefruit nose. Make entirely vegan by omitting the cheese.
½ small seedless watermelon, cut into bite-size pieces
1 pint cherry tomatoes, halved
1 avocado, sliced
½ jalapeno, thinly sliced
¾ teaspoon salt
1 lemon
2-3 tablespoons extra virgin olive oil
1 ball burrata
On a large platter (the more surface area the better!), arrange watermelon, tomatoes, avocado, and jalapeno. Season with salt, making sure to heat the surface of each bite. Squeeze lemon over top and drizzle well with olive oil. Break burrata over salad and serve.
