Breakfast Pasta
Serves 4

The simplest most delicious way to have pork and eggs in the morning – and it works wonders on the handover. Crispy salami will be your new favorite addition to any pasta. 

1 lb. bucatini pasta
1 tablespoon olive oil
¼ lb. sliced salami 
3-4 shallots, sliced
3 cloves garlic, smashed and sliced
2 egg yolks, 1 whole egg
1 cup grated pecorino cheese
Salt and pepper, to taste

Heat olive oil in a large in a large skillet and add salami, cooking until crispy. Add shallots and garlic and cook for another minute or two. Remove from heat and set aside. 

Bring a large pot of water to a boil and salt generously (it should be as salty as the sea). Cook pasta until al dente. Reserve extra pasta water for loosening the sauce. 

In a large bowl, whisk together eggs and cheese. Add hot pasta to the egg mixture and begin to toss. Add crispy salami and toss more, until shiny and amazing looking. 

Season with salt and pepper as needed.
