Cilantro Salsa
Makes 4 cups
There are few things more “summer” then homemade salsa. Chop tomatoes evenly and season well with salt and acid, cilantro if you enjoy - for those of you who taste “soap,” omit.
6 tomatoes, chopped
1 red onion, chopped
3 limes, juiced
1 ½ teaspoon salt
1 bunch chopped cilantro, include stems
In a large bowl combine tomatoes, onion, lime juice and salt. Roughly chopped cilantro, make sure to keep the stems (!), and mix into chopped tomato mixture. Serve with chips and guacamole.
