Green Pea Dip

Green Pea Dip
Makes about 2 cups

This is a great way to start any meal and it’s pretty fool-proof-pantry-proof. I love frozen peas for so many things but any season they are the MVP of the freezer.

1 bag frozen peas, thawed
1 handful fresh mint leaves
1-2 tablespoons extra virgin olive oil, plus. more for garnish
1-2 tablespoons apple cider vinegar
1 tablespoon honey
1 teaspoon salt
Maldon salt, optional garnish
Za’atar or sesame seeds, optional garnish
Crudité or your choice

Blitz peas, mint, vinegar, honey, and salt until chunky or keep going and make it nice and smooth. Plate and season with Maldon, another drizzle of olive oil, and za’atar or sesame seeds. Serve with crudité of your choice and/or bread.
