Greens & Reds and Shaved Brussels Sprouts Salad with Sweet Fig Jam Dressing
Serves 4-6
A heartier option for serving greens in the colder months, but keeps that bright bite you crave alongside rich dishes.
1 shallot, diced
2 tablespoons apple cider vinegar
1 teaspoon fresh orange zest
1 teaspoon fresh chopped thyme
1 tablespoon fig jam or preserves
¾ teaspoon salt
Cracked black pepper, to taste
⅓ cup extra virgin olive oil
1, 4 ½ oz container Bowery Farming Greens & Reds Blend
4 cups shaved brussels sprouts
1 cup pomegranate seeds
Whisk shallots, cider vinegar, orange zest, chopped thyme, fig preserves, salt and pepper together. Slowly stream in olive oil until emulsified and fig is broken up and fully incorporated.
Toss in Bowery Farming Greens & Reds Blend, brussels sprouts, and pomegranate seeds. Toss with dressing to coat.
