Grilled Radicchio with Pistachios & Ricotta Salata
Serves 2-4

Grilling radicchio (or any bitter green) mellows out the natural bitterness of the vegetable by caramelizing it just slightly. The unique minerality of our 2020 Pinot Noir Radian Vineyard and its fresh and vibrant palate keep your tastebuds awake and interested. This pairing allows your mouth to constantly be entertained by the elements of salt, sweetness, bitter, and freshness.

2 heads radicchio, quartered
2-3 tablespoons extra virgin olive oil
Salt
1 lemon
½ cup toasted and chopped pistachios
Ricotta salata

Preheat the grill to medium-high heat. Half each radicchio through the center and season well with olive oil and salt. Grill radicchio for 1-2 minutes per side and remove from the grill when charred on all sides.

To serve, squeeze lemon over the radicchio, sprinkle with pistachios, and microplane ricotta salata over the radicchio.
