Mustard Herb Potatoes 
Serves 4

1 lb. baby potatoes
1 teaspoon salt
2 tablespoons butter
1 heaping tablespoon mustard
¼ cup chopped parsley
¼ cup chopped mint
2 tablespoons chopped dill
2 tablespoons extra virgin olive oil
1 lemon

Place potatoes in a medium saucepan and cover with cold water. Bring water to a simmer over medium high heat and season well with salt (in addition to the salt in this recipe). Cook potatoes until fork tender, about 10 minutes. Strain. 

In the medium saucepan or your serving dish toss warm potatoes with butter, mustard, parsley, mint, dill, olive oil, and lemon juice. Taste for seasoning and add all or as much as you need of the 1 teaspoon of salt. Serve immediately or can be made up to 2 days in advance.
