No Bake Alaskan Trifle
Serves 6-8
This dish is epic and it’s SO easy. It combines all the things we love about a trifle and a Baked Alaska. Use whatever high-quality jam or curd you like.
1 lb. pound cake or similar caked plain cake
1 quart heavy cream or cool whipped topping
1 pint lemon or raspberry curd
3 egg whites
Pinch of salt
Pinch of cream of tartare
1 cup sugar
Cut pound cake into bit size pieces and place at the bottom of a trifle dish. Whip cream, unsweetened or with a touch of sugar if you’d like, until stiff peaks form. You can alternatively use cool whipped topping. Layer on top of cake.
Top whipped cream with curd.
Using a clean whisk or whisk attachment, beat egg whites until just frothy. Add a pinch of salt and cream of tartare and then slowly stream in sugar. Beat until stiff peaks form. Top trifle with meringue.
Using a kitchen blow torch, torch the top of the trifle, if desired.
