Pan con Tomate
Serves 8

Few dishes are easier or more satisfying. This is often served before a meal as a tapas but trust me you can eat Pane con Tomate whenever you damn please.

10-12 slices of bread
Extra virgin olive oil
1-2 cloves garlic
2 beefsteak tomatoes
Salt
Maldon Salt

Preheat broiler or oven to toast bread. Place on a sheet tray and drizzle generously with olive oil. Toast both sides and then while warm, rub with a raw garlic clove, set aside.

Place a box grater over a large bowl and grate tomatoes, the pulp with collect, discard skins. Season well with salt. Add tomato to toast and season with Maldon Salt and more olive oil. Garnish with herbs if desired.
