Peach Cobbler

Peach Cobbler
Serves 6-8

I live for frozen produce, it’s such an under-recogonized ingredient. It makes summer possible, all year long! Today is National Peach Cobbler Day, who knows why this happens in April but perhaps it’s to be in tandum with The Master’s golf tourdament in Augusta, Georgia. Land of the peaches!

Filling:

3 lb. frozen peaches
2 tablespoons all purpose flour
1 tablespoon sugar
Pinch of salt
Bourbon splash, optional 

Preheat oven to 400 degrees F. Combine all ingredients and place in a 9"x 13" pan. 

Topping:

1 1/2 sticks butter, cubed and cold
1 cup all purpose flour 
1 cup brown sugar
Sliced almond, optional

Place butter, flour, and sugar in a large bowl and crumble the mixture together with your hands or a fork until it resembles a coarse meal. Scatter on peaches and bake for 30-35 minutes or until golden brown and bubbly.
