Pear and Arugula Salad

Our 2021 Chardonnay Kite Tail showcases bright acidity and loads of minerality, making it an ideal pairing for zippy salads. This simple staple salad dressing can be double and stored in your refrigerator for up to a week for in-an-pinch dressings and marinades.
1 garlic clove, minced
½ teaspoon salt
1 lemon, zested and juiced
1 heaping tablespoon Dijon mustard
2-3 tablespoons extra virgin olive oil
5 ounces baby arugula
2 endive, trimmed and halved with leaves separated
1 pear, thinly sliced
½ cup walnuts
In a large bowl whisk together garlic, salt, lemon zest, lemon juice, and mustard. Slowing whisk in olive oil until dressing is emulsified. Add arugula, endive, pear and walnuts and toss until lettuces are fully coated with the dressing. Serve immediately.
