Prosciutto Wrapped Shrimp
Makes 12 shrimp
This is an elegant appetizer that only takes two ingredients – our favorite kind! Its evergreen nature makes it a perfect substitute for everyone’s favorite shrimp cocktail and works equally well in the summertime as it does through holiday season. We love to pair this with the 2019 Pinot Noir Gap’s Crown knowing that this perfected pinot works nicely with both the salt and fattiness of the prosciutto without overpowering the shrimp.
12 jumbo shrimp, peeled and deveined
1 slices prosciutto
Salt, to taste
Extra virgin olive oil
Preheat oven to broil, or if using a grill, to medium high.
Season shrimp with salt. Take a slice of prosciutto and wrap each slice around each piece of shrimp, creating 12 bites.
Drizzle a sheet tray with olive oil and place shrimp evenly spaced on the tray. Broil for 3-5 minutes (make sure to watch the) until shrimp is opaque and prosciutto is crispy. If grilling, drizzle shrimp with olive oil and place on the grill.
Serve while hot.
