Ricotta Toast
Makes 1 Toast
There are few things more satisfying than toast, and transforming it from ho-hum to extraordinary are simpler than you might imagine. The trick is layering flavors, choosing high-quality ingredients (since there are so few required to make) and seasoning well.
2-3 tablespoons extra virgin olive oil, plus more to finish
1 cup cherry or grape tomatoes, halved if on the larger side
Salt, to taste
1 slice of bread, to your liking but the fresher and most artisanal you can find
1 clove of garlic, peeled
1/3 fresh ricotta cheese, this can vary slightly it’s not an exact science but to your liking
Black pepper, optional garnish
Lemon zest, optional garnish
Finishing salt such as Maldon, optional garnish
In a small or medium skillet over medium-high heat, heat over olive oil and until warmed and add tomatoes. Rotates the pan slightly or using a wooden spoon cook tomatoes down for about 10 minutes, until slightly wilted but not “popped.” Season with a generous sprinkle of salt and remove from the heat.
Toast bread on both sides and while warm, rub the garlic clove over the topside of the slice. You’ll only use a bit of the clove, you can toss or use for something else.
Slather toast with ricotta cheese and top with tomatoes. Garnish with black pepper, lemon zest and finishing salt.
