Salmon Crudo

Salmon Crudo with Ginger & Shallots
Serves 4

When it’s hot, and it’s too much to cook, crudo is a great weeknight meal alternative. I don’t need to tell you this but quality is king here, choose a sushi grade fish and toss with this versatile dressing.

1 lb. sushi-grade wild salmon
1 small shallot
1, 1-inch knob ginger
1 clove garlic
2 tablespoons low sodium soy sauce
1 tablespoon rice wine vinegar
1 tablespoon sriracha hot sauce
½ a really juicy lemon or 1 whole lemon
Salt, to taste
Cilantro leaves, for garnish 

Thinly slice salmon and lay flat in a shallow bowl. Finely chop shallot, ginger, and garlic and add to a small bowl. Whisk in soy sauce, vinegar, hot sauce, and lemon juice. Pour on top of plated sliced salmon and garnish with cilantro leaves. Serve immediately.
