Spicy Shrimp
Serves 4
This is a super fresh and easy dish that works both as a side and main. It also can be served at any temperature, so it works equally well for a picnic or potluck dish.
2 tablespoons extra virgin olive oil
1 shallot, thinly sliced
1 clove garlic, smashed
1 lb. peeled and deveined shrimp with tails on
¾ teaspoon salt
1 teaspoon red pepper flakes
½ cup dry white wine
1 lemon, few pieces of the rind peeled and juiced
Celery leaves, optional garnish
In a large skillet heat olive oil over medium high heat and sauté shallot. Add garlic, shrimp, and salt, cook for about one minute, flipping shrimp when they become pink and opaque. Season with red pepper flakes and deglaze the pan with white wine. Add lemon rind and juice and cook for another minute until wine creates a glossy delicious, reduced sauce. Garnish with celery leaves and serve with crusty bread.
