Avocado Rose Toast

Avocado Rose Toast
Serves 2

2 slices of bread, toasted
1 ripe avocado
1 lemon
Finishing salt, such as fleurs de sel or Maldon 
Extra virgin olive oil 
1-2 radishes, thinly sliced
Handful of sprouts
Handful of parsley leaves
Red pepper flakes
Toasted pine nuts

Thinly slice avocado lengthwise, creating as many thin slices as you can. Spread out and then thinly roll to create a rose shape and place in the center of the toast. Dress with lemon juice to prevent oxidation and season with salt and extra virgin olive oil. 

Repeat for the second half of the avocado.

Dress with desired amount of radish slices, sprouts, parsley, red pepper flakes and pine nuts.
