Baba Ganoush Toasts
Makes 2-3 cups

Preheat oven to 375 degrees F. Drizzle 1 whole eggplant with extra virgin olive oil and salt. Roast eggplant until tender and slightly browned. Cool slightly and then cut into 1” pieces and place in a food processor or blender.

To the blender add 2-3 cloves garlic, smashed along with salt (to taste), a splash or two of vinegar (about 3 tablespoons) and enough extra virgin olive oil to create a paste. If you’re watching your oil intake, feel free to use water or a combination of water and olive oil.

Spread on toast and garnish with celery leaves.
