Bitter Greens Salad with Blue Cheese Dressing
Serves 4 to 6

16 ounces bitter greens
1 shallot, minced
1 clove garlic, minced
1/2 teaspoon salt
1 lemon, juiced
2 tablespoons red wine vinegar
2 tablespoons mustard
1 tablespoon chopped fresh thyme
1/4 cup extra virgin olive oil
2 to 3 ounces blue cheese

Place bitter greens in a large salad bowl. Whisk together the shallot, garlic, salt, lemon juice, vinegar, mustard, thyme, and olive oil. Add desired amount of blue cheese and crush/whisk into the dressing. You can make it as creamy as desired, or it can look separated and flecked. Toss desired amount of salad with dressing and serve.
