Honey Nut (Delicata) Squash

Honey Nut Delicata Squash
Serves 2 to 4

1 delicata squash
2 tablespoons extra virgin olive oil, plus more for roasting
1/2 teaspoon salt, divided
1 lemon, juiced
2 tablespoons honey
2 tablespoons mustard
1 tablespoon poppy seeds

Preheat the oven to 425 degrees F. Cut the ends off the squash and scoop out the inside. Slice into 1/4” slices and place on a sheet tray. Drizzle with olive oil and season with 1/4 teaspoon of the salt. Roast for 15 minutes, flip and roast again for another 15 minutes.

While the squash is roasting, whisk together the olive oil, remaining salt, lemon juice, honey, mustard, and poppy seeds. Plate the squash and cover with the dressing.
