Celery, ‘Cukes & Zucchini
Serves 6
1 knob of ginger, peeled and grated
1 lemon or 2 limes
2-3 tablespoons unsweetened rice wine vinegar
Salt, to taste
2-3 tablespoons extra virgin olive oil or garlic oil (I had on hand!)
2 zucchini, cut into large 1” pieces
1 cucumber, diced
4 celery stalks diced
1 bunch parsley, roughly chopped stems and all
1 bunch cilantro, the same as above
Whisk together ginger, acid(s) and olive oil. Season with a smidge of salt.
Add vegetables and season again with salt. This will allow vegetables to “sweat” a bit and release moisture and flavor. Toss to coat and taste. Season again as needed will vinegar, olive oil or salt.
