2 endives, bottoms removed and leaves pulled apart
1 shallot, minced
1-2 ounces creamy blue cheese
½ lemon, juiced
Pinch of salt
1-2 tablespoons walnut oil
In a large bowl macerate shallot and blue cheese in lemon juice and salt, breaking up and making creamy with the back of a fork. Drizzle in walnut oil and whisk with said fork. Add endive, toss and serve.
