Crispy Pork Cutlets with Whipped Feta & Radishes
Serves 2

Preheat the oven to 425 degrees F. Line a sheet tray with parchment paper (if you have) for easy clean up.

Thinly pound 2 boneless pork cutlets and season with salt. Using three bowls, add 1 cup all purpose flour to one, 2 eggs to the second (whisk these), and 2 cups breadcrumbs to the third. Season all with salt. Working with 1 cutlet at a time, dip into the flour, then egg, and then breadcrumb, shaking off any excess in between. Place on the sheet tray and drizzle with olive oil. Bake for 20 to 25 minutes.

Meanwhile, in a food processor or blender, blend 1/2 pint (about 8 ounces) feta cheese until smooth.

Cut 1 cup radishes in half and add to a bowl with any clean radish greens. Season with salt and olive oil and toss to combine. To serve, top each cutlet with feta cheese and a bit of the radishes.
