Grilled Mexican Street Corn Salad

I love this easy and FUN side for summer entertaining. It’s quick, delicious and works with a variety of cheeses and herbs you might have on hand.

6 ears corn1 bunch cilantro, chopped
1 onion, diced 
1 cup queso fresco, crumbled
½ - ¾ teaspoon salt divided 
2 limes juiced (about 2 tablespoons)
1/4 cup extra virgin olive oil
1-2 tablespoons sour cream, optional  

Preheat grill to medium high heat and grill each ear of corn “dry,” until slightly fragrant and blackened. Remove kernels from the cob and place in a large bowl. Toss corn together with cilantro, onion, and cheese.

Dress with salt, lime juice, olive oil, and sour cream if desired. Serve and enjoy!
