Grilled Cheese with Spicy Honey

There’s nothing to not like about a grilled cheese. Especially one topped with a sweet and spicy honey made using our Evermill Red Pepper Flakes. Feel free to layer or replace any of the cheeses in this bad boy for your favorite, but our word of advice is to not skimp on the good stuff. Let that gooey inside make itself known.
2-3 tablespoons honey
1 teaspoon Evermill Red Pepper Flakes, plus more for the sandwich if you like it spicy
2 slices bread
1 tablespoon extra virgin olive oil
1 tablespoon butter
2-3 ounces gruyere cheese
2-3 ounce goat cheese
1 cup arugula
In a small bowl mix together honey and Evermill Red Pepper Flakes. This can infuse indefinitely but if you’re in a time crunch, warm up the honey just slightly in the microwave before adding the flakes.
In a medium skillet, heat and melt olive oil and butter over medium heat. Place cheeses and arugula on one piece of bread, and sandwich with the remaining slice. Place in the pan and cook (weighted if you’d like) for 3-4 minutes until toasted and golden brown. Flip and cook for an additional 3-4 minutes. If the cheese doesn’t seem to be melting, cover your pan during this second side.
Remove from pan and halve, drizzle with spicy honey and enjoy while hot.
