Pistachio Mint Lamb & Sautéed Spinach

This is hands down the easiest way to make a sometimes-daunting dish: rack of lamb. Better yet, it’s all in one pan. Your spinach sautés in all the beautiful lamb flavors while your meat rests. Use this as a base, adding more herbs and spices to the “crust” if you feel like extending your ingredient list past five.
1 rack of lamb, about 8 “lollipops”
½ cup pistachios, chopped
½ cup panko bread crumbs
½ bunch mint, chopped
1 5-ounce box baby spinach
Preheat oven to 425° F. Pat lamb dry using a paper towel and season all sides with ¼ teaspoon salt.
In a small bowl combine ½ teaspoon salt, pistachios, panko and mint. Add 3 tablespoons of extra virgin olive oil and mix until a crumb topping forms. Press on fat side of the lamb and place lamb in an oven-safe skillet.
Roast for 15-17 minutes or until internal temperature reaches 135° F for medium rare, remove pan from oven and lamb from pan, let the lamb rest for 10 minutes.
To the hot skillet add spinach and using tongs, toss until wilted. Slice lamb into lollipops and serve over sautéed spinach. This can also be done with lamb chops.
